Orzo noodles with beef

Ingredients:

1 packet orzo noodles

1/2kg tender beef chunks (boiled)

1 cup fresh tomato juice

1 cup beef stock

1 cube beef stock

1 tbsp. butter ghee

Salt + pepper

Method:

Stir-fry the orzo noodles in butter ghee until golden. Add the beef stock cube and water to cover the noodles by one cm. Bring to a boil and stir. Lower the heat and place over a simmering ring until noodles are cooked. Place chunks of beef in an oven-proof dish. Pour over the noodles to cover the beef. Mix the tomato juice with the beef stock. Season and pour over the noodles. Bake in a pre-heated oven at 200°C for around 40 minutes or until the top is crimson. Serve with a mixture of sautéed vegetables and a rich green salad.
