Cannelloni

Ingredients:

1 1/2 cups white flour

2 1/2 cups whole milk

3 eggs (whole)

1/2 kg cooked minced meat

6 tbsp. tomato paste

1/2 cup Rumi cheese, grated

Corn oil

Salt + pepper + basil

Method:

With an electric beater, beat the eggs and milk after seasoning. Add in the flour gradually whilst still beating until it blends well. Pour through a sieve in case of lumps. Leave covered in the refrigerator for at least three hours, and preferably overnight. In the meantime, add two tbsp. tomato paste to the minced meat plus some water. Season and cook together. Prepare three cups of tomato sauce with the remaining paste. In a 15cm non-stick Teflon frying pan, pour a few drops of oil and brush to coat. Pour 30 ml. of the mixture to cover the bottom of the pan. When the bottom side cooks, turn the pancake upside down to cook top side. Remove from pan. Repeat procedure until mixture is finished. Fill each pancake with a tablespoonful of minced meat and roll up. Place in a baking tray. Pour tomato sauce, sprinkle the cheese on top and bake for 15-20 minutes in a preheated moderate oven. Serve hot with a rich green salad.
