500gms. white cabbage (shredded)
1 large carrot (grated)
2 small spring onions (finely sliced)
1/4 cup apple juice
1 tbsp vinegar
1 tsp French mustardMethod:
Place cabbage, carrot and onion in a large serving bowl. Use hands to combine thoroughly. Place remaining ingredients in a small jar. Shake vigorously for 30 seconds or until combined. Pour over vegetables and toss lightly to combine. Serve immediately with fried chicken, hamburgers or as a snack with crisp bread.As a further option, you may divide the quantity of cabbage into two; one half as white cabbage and the second half as red cabbage (sauerkraut) in order to obtain a more colourful coleslaw.
