Ingredients:
1 1/2 kg chicken pieces
4 medium-sized potatoes (unpeeled and cut into big chunks)
2 tbsp fresh rosemary (coarsely chopped)
1 tsp dried thyme
1 whole head of garlic (broken into cloves)
1/2 cup olive oil
Salt + pepper + allspice
Method:
Preheat the oven to a moderately hot 200¡C. Place the chicken, potatoes, herbs, oil and plenty of salt and pepper plus some allspice, in a baking pan. Toss well and bake covered for one hour, turning regularly and brushing the stock over the chicken. Scatter the garlic over the top and bake for a further 30 minutes, uncovered. Serve with any kind of pasta and a rich green salad.
