Ingredients:
8oz. butter
1 lb caster sugar
2 eggs
2 tbsp. milk
12 oz. plain flour
1 tsp vanilla
1 tsp baking powder
1 tsp salt
Method:
Cream butter and sugar with heavy beater on mixer until light and fluffy. Add eggs one at a time and continue beating, alternately adding milk and flour sifted with baking powder and salt. Add va-illa and mix until a firm dough is formed. Chill for one hour. Drop basic mixture in spoonfuls one inch apart on buttered baking sheets and press with knife or fork dipped in cold water. Bake at 190¡C for eight minutes. Cool on a wire rack.
For a variation of flavours, add the following to half the basic bis-uit dough:
-Coconut biscuits: Add 2 oz. desiccated coconut
-Date biscuits: Add 2 oz. chopped dates.
-Ginger sugar biscuits: Add one tsp. ground ginger.
-Nut biscuits: Add 2 oz. chopped nuts.
-Spice biscuits: Add 1/4 tsp. each of ground nutmeg and ground cinnamon.
-Chocolate biscuits: Add 1 oz. cocoa and bake at 160¡C.
