Ingredients:
1 egg
4oz caster sugar
5oz plain flour
1 tsp. baking powder
Pinch of salt
150ml milk
3 tbsp. melted butter
1/4 tsp. lemon essence
3 packets vanilla powder
Method:
Put egg, melted butter, lemon essence and vanilla in blender and blend for 5 seconds. Sift flour, baking powder and salt, and add to blender. Blend on medium speed for 10 seconds. Pour into greased rectangular tin (about 10x7in.) and bake in oven preheated to 180¡C for 25 minutes. Cut in squares and serve warm.Plum coffee cake: Cover the surface of the batter closely with stoned fresh plums (now available on the market), or cooked prunes. Sprinkle with 2oz sugar mixed with a tsp. of cinnamon and bake.
Apple coffee cake: Cover the surface with a thick layer of thinly sliced apples and sprinkle with 2oz mixed brown and white sugar, a pinch of cinnamon or a few chopped walnuts and bake.
