Greek fried chicken

Ingredients:


4 chicken breast fillets
3 tbsp flour
2 cloves garlic (chopped)
1/2kg tomatoes (chopped)
1/2 red capsicum (sliced)
50gms fetta cheese (crumbled)
100gms black olives (pitted and sliced)
2 tbsp dry white wine
1/2 tbsp dry oregano
1/2 tbsp dry rosemary
30gms butter
1 tbsp olive oil salt + pepper + allspice + sweet paprika

Method:


Season the chicken breasts and coat lightly in flour. Heat the butter, oil and garlic in a frying pan until foamy. Fry the chicken for three minutes, each side until browned. Stir in the dry herbs, tomato and wine, then season and scatter over the capsicum and olives. Partially cover and simmer for 10-15 minutes. Top with fetta upon serving. Serve with boiled noodles and a green salad.
