Ingredients:
6 chicken breast fillets (5mm thickness)
1/2 cup plain white flour
1tsp garlic (crushed)
2tbsp fresh parsley (chopped)
2tsp lemon juice
2tsp grated lemon rind
Bread crumbs
2 eggs (beaten) + dash of milk
Oil for deep frying
125gms butter (softened)
Salt + pepper + allspice + oregano
Method:
Combine the butter, garlic, parsley, lemon juice and rind. Transfer the mixture to a sheet of foil and shape into a rectangle of about 5x8cm. Fold the foil to enclose and chill until firm. Cut the chilled butter into six equal pieces. Place a piece in the centre of each breast, fold in the edges and roll up to enclose. Fasten with toothpicks and chill until firm. Toss the chicken in the flour, dip in the combined egg and milk and coat with the bread crumbs. Chill for one hour, then toss in the eggs and bread crumbs again. Half fill a frying pan with oil and fry for five minutes on each side until goldened. Drain on paper towels. Remove the toothpicks and serve with French fries and a green salad.
