Cheesecake

Ingredients:


Base:
250gms plain sweet biscuits125gms melted butter
Filling:
750gms cream cheese (softened)
1/2 cup castor sugar
3 eggs
3tsp grated lemon rind
1/4 cup lemon juice
1tbsp finely ground cinnamon

Method:


Grease a 20cm baking tray (tin or Teflon). Blend or crush biscuits finely, or process on pulse. Stir in butter and form a fine crumbly mixture. Press crumb mixture evenly over base and sides of tray, using a flat-bottomed glass. Refrigerate for 30 or more minutes until firm. Pour filling over. Bake in a moderately slow oven for abut 50 minutes or until firm. Cover cheesecake and refrigerate after cooled off several hours or overnight, before serving. Sprinkle cinnamon on top (optional).
Filling:
Beat cheese and sugar in a medium bowl, with electric egg beater until smooth. Add eggs, one at a time. Beat well in between each addition. Add rind and juice. Beat to form a creamy mixture.
