Ingredients:
1 cup rolled oats
1 cup plain white flour (all purpose)
1 cup castor sugar
3/4 cup shredded coconut
1tbsp golden syrup
1tsp bicarbonate of soda
2tbsp boiling water
125gms butter
Method:
Combine sifted flour, oats, sugar and coconut in a large bowl. In a small pan, combine butter and golden syrup. Stir over low heat until butter is melted. Combine soda and water. Add to butter mixture. Stir in the dry ingredients while mixture is still warm. Place 3 level teaspoonfuls of mixture together, about 4cms apart, on a greased oven tray (s). Press down lightly. Bake in a slow preheated oven at 180¼C, until golden browned (around 30 minutes). Loosen biscuits with a tip of a knife or a thin spatula, while still warm. Leave to cool on trays.
