Ingredients:
2 cups plain all-purpose flour
2tbsp baking powder
1/2tsp bicarbonate of soda
3tsp dry instant coffee
1 cup cocoa
1 cup milk
3 eggs + 2 packs vanilla powder
1 3/4 cups castor sugar
200gms butter
whipped or mock creamMethod:
Grease two deep 20-cms round cake pans. Line bases with greased paper. Beat butter and sugar in a small bowl with electric mixer until light and fluffy. Add eggs, one at a time, sprinkling vanilla on each, beating well between additions. Transfer mixture to large bowl. Fold in sifted flour, baking powder and soda. Combine cocoa and coffee. Fold them in, adding milk. Beat gently until mixture is well combined. Do not overheat. Pour into prepared pans and bake in moderately preheated oven for about 45 minutes. Turn cakes onto wire racks to cool. Join cold cakes with cream. Top with rich chocolate frosting.
Rich chocolate frosting: 100gms dark chocolate combined with 100gms butter in a heat-proof bowl over a pan of simmering water, stirring until smooth. Remove from heat. Cool at room temperature until spreadable. Stir occasionally while cooling.
