Grilled chicken kebab with garlic sauce

Ingredients:


500gms chicken thigh fillets
1 cup green pepper (diced)
1 cup tomatoes (large cubes)
1/4 cup lemon juice
2tbsp oil
salt + pepper + thyme or oregano + allspice

Garlic sauce:
1tbsp crushed garlic
1/2 cup fine bread crumbs
1/4 cup lemon juice
1/4 cup oil
2tbsp fresh parsley (finely chopped)

Method:

Cut chicken into 2cms pieces. Combine with juice, spices and oil. Cover and refrigerate overnight. Soak wooden skewers in water for several hours to prevent burning during cooking. Thread chicken, green pepper, tomatoes alternatively onto skewers. Grill on both sides, basting frequently with marinade, until chicken is tender. Serve with sauce, French fries and a green salad.

Garlic sauce: Blend or process all ingredients until well combined. Add a dash of salt.
