Coconut cake

Ingredients:

1/2 cup plain all-purpose flour
1tsp baking powder
1 cup castor sugar
1 cup desiccated coconut
4 eggs (lightly beaten)
3 packets vanilla powder
2 cups milk
125gms melted butter

Method:

Lightly grease a 24cm-round cake pan. Sift flour and baking powder into a bowl. Stir in sugar, coconut, eggs, vanilla, butter and milk. Combine well until mixture is consistent. Bake in preheated 180°C oven for approximately 45 minutes or until goldened. Serve warm or cold with canned fruit or coconut ice-cream.
