Country chicken

Ingredients:


2 Cornish chicken (whole)
3 large onions (thinly sliced in rings)
1/2 cup garlic cloves (peeled and whole)
5 medium tomatoes (peeled and coarsely chopped)
3tbsp capers
1/4 cup red wine
handful of pitted green olives
salt + pepper + thyme
oil

Method:

Season chicken inside out with some salt and pepper. Brown them in oil in a large pan, on all sides. Remove from pan and leave aside. Add onions to the pan. Stir to golden then add garlic cloves. Stir to tenderise. Add capers, wine, tomatoes and thyme. Stir to combine. Add chicken back. Cover and allow to cook over medium heat. Add green olives just 10 minutes before removing from heat. Serve with rice and a green salad.
