3 large apples (approx. 750gms)
2 cups bread crumbs
1tsp grated lemon rind
1tsp ground cinnamon
Lemon syrup:
1/2 cup golden syrup
1/4 cup water
1/2 cup sugar
1/4 cup lemon juice
Method:
Grease a shallow oven proof dish (6-cup capacity). Sprinkle with a layer of bread crumbs. Peel, core and grate apples coarsely. Combine with rind and cinnamon. Spread a layer of apple mixture over bread crumbs. Repeat layering, finishing with bread crumbs. Pour hot lemon syrup evenly over apple and bread mixture. Bake uncovered in a slow preheated oven about 1 1/4 hours or until lightly browned. Serve warm with cream or ice-cream.
Lemon syrup:
Combine golden syrup, water and sugar in a pan. Stir over heat without boiling and until sugar is dissolved. Remove from heat and stir in juice.
