Homemade caramels

Ingredients:


125gms butter
400gms can sweetened condensed milk
2tbsp golden syrup
3/4 cup brown sugar

Method:

Line a deep 19cm-square cake pan with foil. Grease foil. Combine all ingredients in heavy-based pan. Stir over heat without boiling, until butter has melted and sugar dissolved. Bring mixture to the boil. Whisk constantly about 8 minutes, or until mixture is thick and dark caramel in colour. Pour mixture into prepared pan. Stand caramel 20 minutes. Mark into bite-sized squares, with greased knife. Cool to room temperature. Refrigerate caramel one hour before removing from pan.

NB: Careful watching and constant whisking during cooking this recipe are very important.
