Chicken and pasta salad

Ingredients:


250gms chicken breast fillets
250gms fettucine
100gms boiled peas (blanched)
125gms boiled broccoli (blanched)
1 large green pepper (sliced)
6 green onions (chopped)

Dressing:
1/4 cup lemon juice
1tbsp chopped fresh parsley
2tsp grated fresh ginger
1/4 cup water (or 2tbsp oil)
salt + pepper

Method:

Boil chicken until tender. Drain, cool and slice thinly. Boil fettucine until just tender (al dente). Rinse under cold water and strain. Place fettucine onto a serving plate. Top with peas, broccoli, pepper, onions and chicken. Combine all dressing ingredients in a screw-top jar. Shake well and add to salad. Mix well to combine. Add croutons and grated yellow cheese on top (optional). Serve immediately.
