500gms lean beef stir-fry strips
1 onion (chopped)
1tsp crushed garlic
1x425-gm can tomatoes in juice
60gms fresh spinach (shredded)
1/2 cup dried raisins or sultanas
1/3 cup slivered almonds
2tbs olive oil
1tsp ground turmeric
1tsp ground cumin
salt + pepperMethod:
Mix beef strips with half oil and garlic. Heat wok or frypan on high (no need to add any extra oil). Stir fry beef strips in two batches for one or two minutes, allowing pan to reheat between each batch. Remove all meat and set aside. Heat remaining oil in pan. Stir-fry onion, sultanas and almonds for one to two minutes. Return beef strips to pan. Add tomatoes, spinach, turmeric, cumin, salt and pepper. Allow to cook for five minutes. Stir mix and serve with fluffy couscous or rice, and a green salad.
