125gms chocolate (broken)
1 1/4 cups ground almonds
2/3 cup chopped seedless dates
4 egg whites
1 packet vanilla
3/4 cup sugarMethod:
Melt chocolate in a bowl over a saucepan of simmering water. Cool. Combine almonds and dates. Set aside. Beat egg whites and vanilla until soft peaks form. Gradually add sugar, beating until thick and glossy. Lightly fold through almond mixture and chocolate. Pour into a greased and lined 23cm springform pan. Bake in a moderate preheated oven of 180°C for 45 to 50 minutes, or until a skewer inserted in the centre comes out clean and dry. Serve warm with chocolate sauce on top and cream or vanilla ice-cream.
