Vegetable pasta

Ingredients:

500gms penne pasta
one large onion (finely chopped)
250gms button mushrooms (sliced)
2 large green bell peppers (sliced)
4 medium tomatoes (skinned and diced)
2 medium carrots (grated)
1tsp crushed garlic
1tsp tomato paste
corn oil
salt + pepper + basil (fresh or dried)

Method:

Boil the pasta (al dente) and strain. Heat some oil in a large cooking pan. Add the onion and stir fry until yellowish. Add the garlic and stir to mix. Add the tomato and the tomato paste. Leave to gently cook over medium heat only for five minutes. Add the rest of the ingredients. Season and allow to cook until all vegetables are tender. If needed, add some water. Add cooked pasta to vegetable sauce and stir it in to mix well. Heat all through and serve with grated parmesan or rumi cheese on top (optional).
