Moist fruit cake
(no fat, no sugar, no egg yolks)
Ingredients:
2 3/4 cups (500gms) dried prunes (pitted, finely chopped)
1 cup (150gms) dried apricots (finely chopped)
440gms canned crushed pineapples in natural juice
1/2 cup freshly squeezed orange juice
2 egg whites
2 cups flour
1 packet baking powder
1tsp bicarb soda
1/4tsp ground cloves
1tsp ground cinnamon
Method:
Line sides and bottom of a deep 20cm round tin or a non-stick baking pan. Place dried prunes, apricots, undrained pineapple, juices, cloves and cinnamon in saucepan. Bring slowly to the boil. Simmer uncovered for five minutes. Cover and cool to room temperature. Stir in soda. Beat egg whites until firm peaks form. Fold into fruit mixture. Stir in sifted flour and baking powder (mixture will be very firm). Bake in a preheated moderately slow oven (approximately 1 1/2 hours). Allow to cool on wire rack. Serve at room temperature with ice cream.
