Greek salad

Ingredients:

2 small cucumbers
2 green peppers
1 medium red onion
175gms feta cheese
1kg firm tomatoes
125gms calamata black olives
vinaigrette dressing:
1 part vinegar
2 parts extra virgin olive oil
salt + oregano

Method:

Peel cucumbers. Trim and cut each cucumber lengthwise in half. Slice halves in thick slices. Halve peppers, scrape out seeds and cut away white ribs. Cut into small squares. Peel and trim red onion. Cut thin slice from one side so it sits firmly on chopping board. Cut onion crosswise into thin rings. Cut feta cheese and tomatoes into chunks. Put tomatoes, cucumbers, peppers and onion rings in a salad bowl. Add vinaigrette ingredients, salt and oregano to a screw-top jar. Shake very well and pour over salad. With a large spoon, toss vegetables in dressing. Add olives and feta cheese and gently toss again. Serve immediately.
