Mixed vegetable pie

Filling ingredients:

500gms spinach leaves
2 spring onions (sliced with green leaves)
1 small bunch coriander
1 large bunch dill
1 average bunch chard
1.5 cups whole milk
1tbsp flour
1/2 cup grated Roumi or yellow cheese
1 egg
1/2 cup minced meat, cooked (optional)
1 cube bouillon
salt + pepper + grated nutmeg
butter or oil

Pie:

2 cups flour + 1tsp salt
1tsp baking powder
125gms butter
4-5tbsp cold water
(Proceed as in last week's recipe)

Method:

Sauté vegetables until wilted starting by spring onions. Add grated cheese away from heat. Add minced meat (optional). Make a light béchamel sauce with butter, flour, milk and bouillon. Add beaten egg away from heat. Season to taste. Fill evenly top of pie and bake in a preheated moderate oven of 200°C (until top is firm). Serve warm.
