Onion tart

Filling ingredients:

1 kg onions
3 tsp. flour
3 eggs
60 gms. grated yellow cheese
3/4 cup cream
2 tbsp. milk
Salt + pepper + grated nutmeg
45 gms. butter
1 tbsp. olive oil
(Pie ingredients and method as in issue No. 520)

Method:

Slice the onions into rings. Heat butter and oil in a large cooking pan. Add onion rings and cook over low heat stirring occasionally for 30-35 minutes or until very tender and goldened. Remove from heat and allow to cool completely. Beat the eggs, cream, milk and seasoning together in a large bowl. Gradually stir in the cooled onion and half the grated cheese. Spoon into pastry base, sprinkle with the remaining cheese and bake for 20-25 minutes or until tart is goldened in a preheated oven of 200°C. Set aside for 10 minutes before serving.
