Cream cheese strudel
Ingredients:
250gms cream cheese (softened)
1/4 cup plain flour
2 sheets ready-rolled puff pastry (large)
1/3 cup raisins or sultanas
3tbsp castor sugar
1tbsp castor sugar (extra)
2tbsp milk
1tbsp lemon juice
pinch of cinnamon
Method:
Preheat oven to 180°C. Beat the cream cheese, lemon juice and sugar together until smooth. Lightly stir in the raisins or sultanas and sifted flour. Place half the cheese mixture along one side of each pastry sheet, about 5cm from the edge. Roll up as for a Swiss roll. Press ends together to seal. Place on a greased baking sheet. Brush with milk, sprinkle with extra sugar and cinnamon. Bake the strudel for at least 25 minutes or until golden browned.
