Macaroni with leeks

Ingredients:

500gms pasta (penne or shell-shaped)
4 leeks (chopped with tender green parts)
1 packet chicken sausages (sliced)
2tbsp flour
3 cups milk
1/2 cup cream
1 cup grated tasty yellow cheese
3tbsp grated parmesan or Roumi cheese
30gms butter
60gms butter (extra)
salt + pepper + grated nutmeg

Method:

Cook pasta in boiling water (al dente). Drain and rinse under cold water. Place in a greased shallow ovenproof serving dish. Sauté leeks and sausages in butter for 3-4 minutes. Toss through pasta and slightly season. Heat extra butter in a saucepan. Add flour and stir for one minute. Off the heat, add milk stirring. Continuously stir over heat until sauce begins to boil. Add cheese and cream. Pour the sauce over macaroni mixture and sprinkle top with grated parmesan. Bake at 200°C for 45 minutes or until goldened. Serve hot with a rich salad.
