Spinach turnovers
Ingredients:
500gms ready-rolled puff pastry squares
750gms wilted spinach
3/4 cup grated yellow cheese
2 egg yolks (beaten)
1 whole egg (beaten)
juice of one lemon
salt + pepper + grated nutmeg
Method:
Release puff pastry squares before totally thawed. Drain spinach and squeeze to extract as much water as possible, then chop finely. Place in a bowl and add grated cheese, egg yolks, lemon juice and seasoning. Mix well and divide between pastry squares. Brush edges of pastry with water. Fold pastry over spinach and press edges together firmly. Brush pastry with beaten egg and a pinch of pepper. Place turnovers on a greased baking tray and bake in a preheated oven at 200°C until lightly goldened (approximately 20 minutes).
