Marinated mushrooms

Ingredients:

500gms button mushrooms
one small onion (finely chopped)
one small clove garlic (peeled)
1 1/2tbsp tomato sauce (not paste)
1tbsp lemon juice
1/2 cup vinegar
1/2 cup water
one bay leaf
2tbsp oil
salt + pepper

Method:

Place mushrooms in saucepan with water and lemon juice. Heat until boiling. Reduce heat and simmer until tender (2-3mn). Drain and place in a bowl. In a saucepan, combine vinegar, onion, garlic and bay leaf. Heat until boiling. Reduce heat and simmer until onion is tender. Stir in oil and tomato sauce. Season to taste. Pour marinade mixture over mushrooms. Cover and refrigerate overnight. Remove the garlic and bay leaf before serving.
