Chicken with mushrooms

Ingredients:

4 chicken breast fillets
2 tsp. oyster sauce
2 tsp. soy sauce
2 tsp. corn flour
3 spring onions
1 onion
125 gms. button mushrooms
2 tbsp. oil + 2 tbsp. extra
Salt + pepper + allspice

Method:

Cut chicken into 1cm strips. Season (lightly on salt), combine sauces, cornflour and oil. Combine with chicken. Mix well and let stand for 30 minutes. Cut onion into thin wedges and spring onions into 3 cm lengths. Heat half the extra oil in pan. Add all the onions and cook until soft. Stir in the mushrooms and toss over high heat for one minute. Remove from pan. Add remaining oil to pan. Stir in chicken mixture and cook over high heat until golden browned. Return mushroom mixture to pan and cook for one minute more to heat through.

Serve with rice and salad.
