Cheesy Baked Chicken

Ingredients:

1/2kg skinless, boneless chicken breasts
6 potatoes (sliced)
1/2kg fresh broccoli heads (chopped)
1tbsp finely chopped parsley
1 can condensed cheese soup
1/2 the can water
Salt + pepper (to taste)
Grated yellow cheese

Method:

Preheat oven to 175¡C. In a bowl, combine soup, water and parsley. Mix together. Place chicken and potatoes in a baking dish. Season. Pour cheese mixture on top. Bake covered in preheated oven for one hour. Add broccoli to dish and bake for a further 20 minutes or until tender. Sprinkle grated yellow cheese on top. Uncover and leave for 5 minutes until cheese is melted. Serve immediately with a green salad and sautéed vegetables.
