Fruity cake

Ingredients:

1 cup butter
2 cups sugar
3 cups flour
6 whole eggs
1 cup orange juice
3/4 cup orange rind(coarsely grated)
250 gms dried raisins
3 large ripe bananas (fork- mashed)
1 packet baking powder
1 packet vanilla
1 tbsp. ground cinnamon

Method:

Beat butter and sugar together until creamy. Beat the eggs and vanilla together. Add to butter and sugar mix. Add the orange juice, bananas and raisins. Mix well with a spatula. Add the baking powder to the flour and sieve. Add gradually to the mixture blending with a spatula (not an electric blender) until all ingredients mix well and the flour is totally absorbed. Pour onto a butter- coated, floured cake tin, allowing enough space for cake to rise. Place in a preheated 200-degree Centigrade oven for 45 minutes, testing with a tooth-pick before removing. Allow to cool in tin then remove to a wire rack. Slice and serve; plain or with vanilla ice-cream.
