Fillet steak Tostada

Ingredients:

4 Fillet steaks (about 150 gms. each)
1 Onion chopped
3 Cloves garlic (crushed)
130 gms. can corn kernels (drained)
2 Tomatoes (chopped)
4 Tortillas
4 Slices tasty cheddar cheese
2 tbsp. chopped coriander
rind and juice of one lemon or lime
1/2 tsp. chopped chilli
1/2 Capsicum (seeded and chopped)
2 tbsp. oil + 2 tbsp. extra
Salt + pepper

Method

To prepare salsa: Heat oil in a frying pan. Sauté onion, capsicum and garlic until onion is tender. Stir in corn, tomatoes, coriander, lime and chilli. Season to taste. Mix well, keeping warm. Brush steaks each side with a little oil. Grill for 3 to 5 minutes each side, depending on how well you like your steaks cooked. Heat extra oil in a frying pan. Fry each tortilla one minute each side. Place a steak in the middle of each tortilla. Top with a slice of cheese. Cook under a preheated grill until cheese has melted. Serve each tostada with prepared salsa and salad.
