Cottage Pie
Ingredients:
500 gms minced beef
5 medium onions (about 300 gms) chopped
1 tsp. crushed garlic
250 gms carrots (sliced)
1/4 cup tomato paste
1 cup beef stock
2 tbsp. fresh chopped parsley
40 gms butter
Salt + pepper + grated nutmeg + allspiceTopping:
750 gms potatoes
1/2 cup finely grated yellow or Swiss CheeseMethod:
Heat butter in pan. Add onions, garlic and minced beef. Cook stirring until beef is browned. Add carrots, paste, stock and season. Simmer covered, until carrots are tender. Remove from heat and stir in parsley. Spoon mixture into ovenproof dish (6 cup capacity). Spread with topping. Roughen topping with fork. Bake uncovered in moderately hot oven until top is goldened. Serve with a green salad.
Topping:
Boil potatoes until tender, and drain. Combine potatoes with butter in a bowl. Mash until smooth. Stir in cheese and mix well.
