Luncheon Cake

Ingredients:

6 oz. plain flour
8 oz. castor sugar
3 eggs
8 oz. walnuts
1 lb. raisins
2 tbsp. milk
2 tbsp. honey
1/2 tsp. baking powder
1/2 tsp. ground nutmeg
1/4 tsp. salt
1/4 tsp. bicarbonate of soda
4 oz. butter
Vanilla

Method:

Cream butter and sugar until light and fluffy. Beat eggs and vanilla together and add to creamed mixture with sifted flour, baking powder, salt and nutmeg. Stir in milk. Mix honey and bicarbonate of soda together and add to mixture. Stir walnuts and raisins. Put mixture into greased and floured 2 lb. loaf tin. Bake at 200¡C preheated oven for approx. 2 hours or until cooked (checked by a tooth-pick). Cool in tin before turning out.
