Tomato and tuna pasta
Ingredients:
500gms shell pasta
1 onion (chopped)
1 can chopped tomatoes + 1 tbsp tomato paste
1 can tuna (drained)
3/4 cup cream
2/3 cup pitted black olives (halved)
1 tbsp corn oil
salt + pepper + basil + oreganoMethod:
Cook pasta in plenty of boiling water until just tender (al dente). Meanwhile heat oil in a saucepan over medium heat. Sauté onion until tender. Add tomatoes, paste, tuna and season. Cook for 10 minutes. Add the cream and olives only to heat through. Rinse cooked pasta under cold running tap water. Heat pasta back in pan after draining, covered in pan over low heat for a couple of minutes. Toss tuna sauce through hot, drained pasta and serve immediately with a green salad.
