Simple Beef Stir Fry

Ingredients:

1 Cup lean beef strips
1 Small onion (thinly sliced)
6 Cherry tomatoes
1 Yellow bell pepper (thinly sliced)
1 tsp. crushed garlic
1 tsp. corn starch
1 tbsp. soy sauce
1 tsp. corn oil
Oil to stir fry
Pepper + fresh grated ginger + dash of hot chilli (optional)

Method:

Mix corn starch, soy sauce and corn oil in a bowl. Add beef strips. Cover and marinate in refrigerator overnight. Heat some oil in a frying saucepan or a small wok. Stir fry the onion on high heat, then the ginger, then the bell pepper, then the garlic; each for one minute only. Add the beef, strained from its marinade. Stir for a few minutes to cook. Add tomatoes and seasoning whilst stirring. Lift off pan with a straining spatula and serve with rice.
