Rich Chocolate Mousse

Ingredients:

200gms cooking chocolate
3/4 cup condensed sweetened milk
3 eggs (separated)
300ml thickened cream
2 tbsp rum or cognac

Method:

Combine the chocolate and milk in the top of a double boiler.

Stir over simmering water until chocolate has melted. Remove from heat. Cover and leave to cool. Stir in egg yolks until well- mixed. Add rum or cognac. Stir well to combine. Beat cream until soft peaks form. Using a large metal spoon fold the cream into the chocolate mixture. Beat egg whites until stiff peaks form. Fold into chocolate mixture. Spoon mixture into individual serving cups. Refrigerate until firm and serve.
