Ice-Cream Layer Cake
Ingredients:
1 Litre strawberry ice-cream
1 Litre vanilla ice-cream
500 gms strawberries
1/2 Litre liquid cream
8 tbsp strawberry jam
Method:
Slightly soften ice-cream and press into four cake tins to make two strawberry layers and two vanilla layers. Cover each tin with foil paper and freeze until firm. Unmould ice-cream and arrange in alternate layers, spread with strawberry jam on a foil-covered cake board. Chop strawberries and fold into cream whipped with a little sugar to taste. Cover cake with cream mixture and freeze, uncovered, for three hours. Wrap in foil for storage or serve immediately.
