Sticky Date Pudding
Ingredients:
11/2 cups all purpose flour
1 packet baking powder
11/4 cups pitted dry dates (chopped)
3/4 cup sugar
2 eggs
1 tsp. vanilla essence or 1 packet of powder
1 tsp. bicarbonate of soda
1 cup water
60 gms. butter (softened)Caramel Sauce:
1/2 cup brown sugar
300 ml. cream
125 gms. butterMethod:
Cream butter and sugar until light and fluffy. Add the eggs one at a time, beating well with vanilla after each addition. Combine dates and water in a saucepan. Bring to the boil. Stir in the soda. Remove from heat and continue stirring until dissolved. Fold flour into the creamed mixture, followed by the date mixture. Pour into a greased and floured 6-cup baking tray. Bake in a moderately slow preheated oven (160 C¡) for 45 to 50 minutes or until a wooden skewer inserted in the middle comes out clean and dry. Serve warm with cream, ice- cream an caramel sauce.
Caramel Sauce: Melt butter and sugar in a pan. Stir in cream. Bring to the boil while stirring. Serve warm or cold.
