Fish Skewers

Ingredients:
500 gms. firm fish (boneless and cubed)
1 tbsp. crushed garlic 8 cherry tomatoes
1 red + 1 green capsicum (diced)
1/4 cup lemon juice
1 tbsp. fresh dill (chopped)
1/2 tsp. each: Salt + pepper + cumin + paprika + Tabasco Sauce
2 tbsp. olive oil
Method:
Place fish in a bowl. Whisk together lemon juice, oil, dill, garlic and all the seasoning. Pour over fish mixing well. Marinate for 12 hours. Soak eight wooden skewers in warm water for 20 minutes. Thread pieces of fish onto skewers alternately with capsicum and tomato. Cook on a hot barbecue plate or grill for 10 minutes, basting and turning regularly. Serve with fried or curry rice and a "tehine" salad.
