Sufra Dayma

Savoury Cauliflower Cheese

Ingredients:

1 small cauliflower (broken into florets)
2 onions (chopped)
4 medium beef sausages (sliced)
25 gms. plain flour
500 ml. milk
250 gms. cheddar cheese (grated)
250 gms. mushrooms can (sliced and drained)
1 tbsp. oil
75 gms. butter
Salt + pepper + grated nutmeg

Method:

Cook the cauliflower in boiling salted water for 10 minutes. Drain thoroughly. Melt half the butter in a saucepan. Add the onion and stir gently only until slightly coloured. Add the sausages and fry whilst stirring for five minutes. Stir in the flour and cook, stirring, for one minute. Gradually stir in the milk, away from heat, stirring, and bring to boil. Cook stirring, for two minutes until slightly thickened. Remove from the heat and add the cheese, reserving two tablespoons. Heat remaining butter and oil in a frying pan. Add the mushrooms and fry over fairly high heat. Remove from the pan with a slotted spoon and stir into the cheese sauce. Season to taste. Arrange cauliflower in an ovenproof dish and pour the sauce over to cover. Sprinkle with the reserved cheese and bake in a preheated medium oven until top is goldened. Serve with a salad.
