Soufra dayma
Indian Chicken (I)

Ingredients:
1 kg chicken fillets (breast), cubed
4 tbsp. garam masala
2 tubs of yoghurt
1 tsp. crushed garlic
Garam Masala
- 10 wooden stalks of cinnamon (broken into pieces)
- 6 tbsp. corriander grains
- 6 tbsp. cumin seeds
- 6 tbsp. black pepper grains
- 12 cardamom pods (crust removed to use inside grains)
- 10 whole cloves
Dry roast all ingredients in a pan and grate one whole nutmeg and keep aside. When spices cool off, grind in an electric grinder to powder, then add nutmeg. Mix and keep in a tightly closed glass jar.
Chicken Sauce:
3 tbsp. tomato paste
4 tbsp. garam masala
1 medium onion (sliced)
1/4 cup cream
1 tsp. each : turmeric + hot paprika
Butter + oil
1 chicken bouillon
1 tbsp. each : chopped dill + green corriander
