Apple Oatmeal Cookies

Ingredients:
11/4 cups self-raising flour (sifted)
3/4 cup rolled oats
1 cup brown sugar
1 apple (peeled and chopped)
125 gms walnuts (chopped)
2 eggs + vanilla
125 gms. butter
Method:
Beat butter and sugar together until pale and creamy. Add eggs one at a time, beating well after each. Add vanilla and beat to distribute. Fold in flour and rolled oats. Add walnuts and apple, mixing well. Drop tablespoonfuls of mixture onto non-stick baking trays. Allow room for spreading. Bake in a moderate oven (preheated) of 180 C for 12-15 minutes. Transfer to a wire rack to cool. Serve plain or with ice- cream.
