Sufra Dayma:

Assorted Christmas drinks

Traditional Eggnog:

Christmas eggnog is the highlight of the seasonal festivities. While it is traditional to use brandy in this drink, I personally prefer Kahlua, Tia Maria or Bailey's; coffee flavoured liqueurs, which give it a smoother taste.

Ingredients:

(6 cups) serves 8
4 eggs (separated)
2 cups hot milk
2/3 cup Kahlua, Bailey's or Tia Maria
1/3 cup castor sugar
1/2 cup cream

Method:

place egg yolks, sugar and milk in a large heat-proof bowl, over a pan of simmering water. Whisk for about 15 minutes or until mixture lightly coats the back of a metal spoon. Remove from heat, stir in liqueur, cover and refrigerate for one hour. Beat cream in another small bowl until it thickens. Fold into liqueur mixture. Beat egg whites in a small bowl until soft peaks form. Gently fold into liqueur mixture and serve.
