Sufra Dayma: French Onion Soup

Ingredients:
4 large onions (thinly sliced)
8 slices white bread (toast slices)
250gms cheddar or gruyere cheese (sliced)
60gms grated parmesan cheese
2 tsp. flour
6 cups water
4 chicken stock cubes (preferably beef if available)
60gms butter
Pepper
Method:
Heat butter in large saucepan. Add onions. Sauté until onions are tender and golden browned. Add flour. Stir until well combined. Stir in stock and water. Bring to boil. Reduce heat and simmer covered for 30 minutes. Season with pepper. Cut bread slices into 10cm rounds. Place one slice of cheddar or gruyere on top of bread slice to cover it. Put under grill or in microwave for a few seconds to slightly melt. Put one bread slice with cheese into each bowl. Sprinkle on top some grated parmesan. Pour very hot soup over and serve immediately.
