Sufra Dayma:

Swiss Chicken

Ingredients:

4 whole chicken breasts (cut into 8 fillets)
3 shallots (chopped)
8 slices cold cuts (your choice)
8 slices Swiss cheese
1 tsp. crushed garlic
1 tsp. mustard
Flour
3/4 cup dry white wine
Butter
Salt pepper

Method:

Season chicken breasts with salt and pepper and lightly dust with flour. Heat butter in frying pan. Add shallots and garlic just to sauté. Add chicken stirring gently on both sides until lightly golden browned. Add wine, bring to the boil then reduce heat. Simmer covered for 20 minutes, or until chicken is tender. Remove chicken from pan. Put a cold cut slice on each piece of chicken then top with a slice of cheese. Cook in moderate oven in an oven-proof serving dish, until cheese is melted. In the meantime, bring liquid in pan to the boil, uncovered. Reduce heat, add cream and mustard, stirring to combine. Season with salt and pepper. Pour sauce over chicken and serve immediately with buttered pasta.
