Parmesan Crumbed Fish

Ingredients:

750 gms. fish fillets

3 cups fresh bread crumbs

1 tbsp. chopped parsley

2 tbsp. grated Parmesan cheese

1 tsp. dry mustard

1 egg (beaten)

2 tbsp. milk

Flour

Salt + Pepper

Butter

Mustard Sauce

2 egg yolks

1/2 cup sour cream

1 tsp. flour

1/2 cup milk

2 tsp. prepared mustard

4 shallots

Method:

Combine bread crumbs, parsley, parmesan and dry mustard. Season with salt and pepper. Coat fish with flour. Dip into combined egg and milk. Coat well with bread crumb mixture. Melt butter in large pan. Fry fillets until golden browned and cooked through. Serve with prepared mustard sauce.

Mustard Sauce:

Mix flour to a smooth paste with a little of the milk. Combine with remaining milk and rest of ingredients. Mix well and pour into top of double saucepan. Stir over simmering water until thickened. Remove from heat immediately.
