Curried Lamb Chops

Ingredients:
1 kg. lamb chops
1 large onion (chopped)
2 tbsp. flour
2 tbsp. curry powder
1 tsp. dry mustard
2 chicken stock cubes
1 medium tomato (skinned and chopped)
1 tbsp. fresh chopped coriander leaves
1 tsp. soy sauce
45 gms. butter
Salt + pepper + thyme + grated nutmeg
Method:
Sauté chops in melted butter until golden browned. Remove from pan. Add onion and sauté until transparent. Add flour, curry powder, mustard tomato and seasoning. Stir for two minutes. Add boiling water (approx. one cup), stock cubes and stir to dissolve and combine with flour mixture, away from heat. Return to heat stirring continuously until sauce boils and thickens. Reduce heat and simmer for three minutes. Return chops and add soy sauce, and stir to combine. Simmer covered over low heat until chops are tender. Serve with rice and yoghurt salad.
