Sufra Dayma:

Curried Egg Dip

Ingredients:

3 hard boiled eggs (finely chopped)

250 gms cream cheese

1 small onion (finely chopped)

1 tbsp fresh parsley leaves (finely chopped)

1 tsp curry powder

1/2 tsp dry mustard

1/2 tsp paprika

1/2 cup mayonnaise

1/2 cup sour cream

30 gms butter

Salt + pepper

Method:

Beat cream cheese, mayonnaise and sour cream until smooth. Heat butter in frying pan. Add onion and sauté gently until tender. Allow to cool then add to cream cheese mixture. Add curry powder, mustard, paprika, eggs and parsley. Season with salt and pepper. Mix well with a spatula until all ingredients are well combined. Refrigerate until ready to serve. Serve with crisp bread and crackers.
