Breaded chicken in cheese sauce

Ingredients:
10 chicken breast fillets
1 1/2 litres whole milk
3 tbsp all purpose flour
Extra flour for coating
2 eggs (lightly beaten) + a dash of milk
2 bouillon cubes
Breadcrumbs (for coating)
300gms each : grated mozzarella, grated yellow cheese
250gms sliced canned button mushrooms (drained) (optional)
Butter + oil
Salt + pepper + allspice
Method:
Season chicken, lightly coat with flour, then with eggs and milk and finally with breadcrumbs. Fry in hot oil to golden on both sides. Remove on paper towels and leave aside. In a cooking pan, heat a mixture of butter and oil. Add the flour and stir until it slightly changes colour. Add the milk and bouillon cubes. Stir constantly until it thickens. Remove from heat and add cheese, retaining two tbsp of each kind. Stir to combine into sauce. In an oven-proof serving dish, place chicken in a single layer. Distribute mushrooms evenly on top. Pour cheese sauce over and sprinkle retained cheese on top of sauce. Place under a grill for a few minutes to melt cheese. Serve immediately with penne pasta aside.
